Chipotle-Style Cilantro lime rice is a key component of many Chipotle dishes. Here’s how to make it at Home:
Ingredients:
- 1 Cup white or Brown Rice
- 2 Cups of water
- 1 Tablespoon of olive oil
- 1\4 Cup of fresh cilantro
- Salt to your taste
Instruction:
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, boil 2 cups of water.
- Add rice, cover, and reduce the heat to low. Wait for about 15-20 mins until the water is absorbed and the rice is cooked.
- Fluff the rice with a fork, then stir in the olive oil, lime juice and fresh cilantro, season with some salt to your taste.
2. Chipotle-Style Chicken
Chipotle’s Chicken is merinated in a flavorful, slightly spicy mix . here’s how to do it at Home.
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoon of olive oil
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1\2 teaspoon of cumin
- 1\4 teaspoon of cayenne pepper
- Juice of lime
- Salt and pepper to your taste
Instruction:
- In a bowl, combine the olive oil , chili powder, paprika, garlic powder, onion powder, cumin, cayenne, lime juice , salt and pepper.
- Coat the chicken breast with the merinade and refregerate for at least 30 minutes , or overnight for more flavors.
- Grill or pan-sear the chicken over medium-high heat for 6-7 mins per side, or until cooked through.
- Let the chicken rest for a few mins , then slice it thinly
3.Chipotle-Style Beef Barbocoa:
Barbocoa is tender, shredded beef cooked with spices, making it perfect for burritos or bowl.
Ingredients:
- 2 Ib beef chuck roast
- 1 tablespoon olive oil
- 1 medium onion (chopped)
- 4 cloves garlic (minced)
- 2 chipotle peppers in adobo sauce, chopped ( or use chipotle powder)
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon lime juice
- 1 cup beef broth
- Salt and pepper to your taste
Instruction:
- Heat the olive oil in a large pot or dutch oven over medium-high heat. Brown the beef on all sides, about 4-5 per side.
- Remove the beef and set aside, in the same pot, saute the onion and garlic until softened , about 3 mins.
- Add chipotle peppers, cumin , oregano, and lime juice and cook it another min.
- Return the beef to the pot , add the beef broth, and bring to a simmer.
- Cover and cook on low heat for 3-4 hours, or until the beef is tender and easily shreddable.
- Shred the beef with fork, mixing it with the cooking juices. Adjust seasoning with salt and pepper.
